1 cup chopped chicken breast or firm tofu 1/2 head romaine lettuce 1/4 chopped red onion 1/2 stalk celery 1 tsp. sunflower seeds 1 1/2 Tbsp. extra virgin olive oil 2 Tbsp. fresh lemon juice 1/4 tsp. finely minced fresh ginger

| How to Prepare : |
|
Fry chicken breast in pan. Chill before preparing salad.
Toss all ingredients together until fully coated with olive oil and lemon juice. Serve on a bed of romaine lettuce.
